1. Cook Noodles: Boil the noodles according to package instructions. Drain and set aside.
2. Stir-fry Vegetables/meats: Heat oil in a pan, add garlic, pork/beef/chicken mince (optional), carrots, and bell peppers, and stir-fry for 2-3 minutes.
3. Add Noodles: Add the cooked noodles to the pan along with soy sauce, oyster sauce, vinegar, salt, and pepper. Stir well to combine.
4. Garnish: Stir in the chopped spring onions and serve hot.
