Ingredients:
- 2 medium potatoes (shredded)
- 2 tomatoes (chopped)
- 2 cloves garlic (minced)
- 1 tbsp soy sauce
- 1 tbsp vegetable oil
- Salt and pepper to taste
Cooking Steps:
- 1. Blanch Potatoes: Blanch the shredded potatoes in boiling water for 1-2 minutes. Drain and set aside.
- 2. Cook Tomatoes: Heat oil in a pan, add garlic, and stir-fry until fragrant. Add the chopped tomatoes and cook until soft.
- 3. Stir-fry Potatoes: Add the blanched potatoes to the pan, season with soy sauce, salt, and pepper, and stir-fry for another 2-3 minutes.
- 4. Serve: Serve hot with rice.
