红烧茄子 (Braised Eggplant)
Ingredients:
- 2 medium eggplants (cut into chunks)
- 2 cloves garlic (minced)
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp dark soy sauce
- 2 tbsp vegetable oil
- Fresh spring onions for garnish (optional)
Cooking Steps:
- 1. Sauté Eggplant: Heat oil in a pan, add eggplant chunks, and fry until soft and golden. Remove and set aside.
- 2. Make Sauce: In the same pan, add garlic and sauté until fragrant. Add soy sauce, sugar, dark soy sauce, and a little water. Bring to a boil.
- 3. Combine: Add the fried eggplant to the sauce and braise for 5-7 minutes until the flavors are absorbed.
- 4. Serve: Garnish with fresh spring onions and serve hot with rice.
